Preparing rice for sushi

Preferably, choose a Californian rice from Japan, i.e. "japonica"  It's best to test several different types of rice yourself.  What's most important is to soak it in water overnight before you cook it.

Add the same amount of water to the same amount of rice, once you've washed it well.

     1 cup of water for each cup of rice.

No need to add salt.  There are two positions on the rice cooker:  "cook", and "keep warm".  The lid may rise while the rice is cooking, that's normal.  The total cooking time is approximately 40 minutes, from 13 to 18 minutes to cook, and 20 minutes for the water to be completely absorbed.

Recipe for the vinegar:  for 1 liter of rice, add 100 cc of rice vinegar ("su" or komezu), 45 grams of sugar and 25 grams of salt into a pan and heat until the sugar and salt dissolve.

Then, dampen the rice with this vinegar.  Ideally, the rice should be placed in a broad and shallow dish (1);  Then pour the vinegar mixture onto the rice, mix gently (2), allow it to become lukewarm then prepare the sushi (3).
